I start by using Mission Low Carb Tortillas, you can use ANY low carb brand.
Next I use either Ribeye Steak or NY Strip Steak, but feel free to use any type of beef you want. I stick to fattier cuts of beef because it helps your body to remain in Ketosis.
Step 1: Slice the beef you plan on using for the Tacos.
In a skillet heat a few tsp of Avocado Oil, add the beef, along with 1/4 cup of soy sauce and 2 tbsp of powdered Stevia or Splenda and 2 cloves of garlic minced. I ALWAYS prefer Stevia or Monkfruit over any other artificial sweeteners.
Let this simmer for about 10 minutes. The longer you simmer, the more flavor the meat will have but be careful not to overcook the meat.
Step 2: Make the cabbage/Kimchi slaw.
I use a 14 oz bag of "slaw", add 2 tbsp of mayo and 1tbsp of sesame oil, and 1 tbsp of ACV.
Add Kimchi to taste. Let this sit in the fridge for about an hour.
Lastly I top with Cotija Cheese, Cilantro, Onion, Sour Cream and Gochujang.
